Mine used to be getting up so I go to the gym, get the exercise in while I am at my peak energy level. Then on the return trip, I stop at Jamba Juice to get the largest carrot/apple juice. Next is a stop at the Irvine Farmers’ Market and let the produce selection determine what I would eat that week. By the time I get home before 11am, I feel very accomplished already.

Now, I am making breakfast at home. Don’t get me wrong, I do love making breakfast. Because we both work some indecent hour, meaning getting up really early during the week (I am usually out of the house by 6am), on the weekend, even without setting the alarm, our body clocks just get up around 7am at the latest!!! Tom normally turns on the TV while I get the tea and the coffee. I don’t drink coffee, but I make it for Tom. Well, because I don’t taste it myself, quality control is questionable at best! Oh, if you don’t make it, you cannot complain about it….Well, he is good. He hasn’t complained about it.
I normally mousy around the kitchen a bit and put away the dishes, pots and pans used previous night. Then it is time to figure out breakfast. I don’t believe in paying $$ for breakfast when one can make it so easily…. For me, breakfast depend on what is in stock.
If you haven’t noticed yet, breakfast is definitely coming back in STYLE!!! We are not talking about just eggs any style, but some fancy lovely items. Lately, I have seen new restaurants specialize in breakfast. I have seen Savuer magazine doing a special issue just focusing on breakfast. And breakfast is so good for you, why not.
Back to my story, if I don’t feel up for it, then it is scramble eggs with bacon. I usually put some stuffs in the scramble eggs, green or white onion, herbs if there are some in the fridge. By the way, I cook enough eggs even Tom hasn’t asked for the bread. Yes, cutting out the carb where possible.
When I am in the mood, then I will play with some other ingredients. Here are couples I made lately.
Banana Pancake – usually, the banana pancake involves mashed banana. This one uses whole pieces of banana. So after you cook it, it is kind of like caramelized banana dessert. I did have to try couple rounds before I got the hang of not losing my banana when I flip the pancake over.

Corn beef scramble – I got this big piece of corn beef when it was on sale. I made it for dinner one night. It was really good, just using the seasoning and recipe on the package. With just the two of us, I have tons of leftover. I froze it in 2 people portion size bag. This is perfect for adding to breakfast. It doesn’t take long to defrost the thing. I cut up the corn beef to really small pieces and pan fried it to crisp! Then just add it on top of the eggs. No mash potato, still no carb where possible…Love it. I don’t even need to season the eggs because the beef has lots of salt and flavor already. So if you see corn beef on sale next time (probably in April soon), get it. It’s a great deal. Otherwise, you are paying $10 just for one serving of corn beef hash. Oh, spinach is a great addition to the corn beef, it lighten up the salt load from the corn beef.
It certainly seems like I am replacing the exercise routine with eating routine…oh my goodness; I guess I need to figure out where / when to add the exercise piece back!!!
